Get Up and Bake Yellow | www.eaaa.org.uk

Norfolk chef Charlie Hodson appears live on Instagram tomorrow at 10am, cooking a delicious cake for the East Anglian Air Ambulance’s Get Up and Bake Yellow fundraising campaign.

You can join Charlie and a member of the EAAA crew, to learn how to bake a Persan Love Cake, created with Norfolk Saffron by clicking on the above link. It’s one of many planned events to raise much needed cash for this vital service.

Here’s the recipe to help you get ready for tomorrow’s free, fun session:

Persian Love Cake

INGREDIENTS

200g soft butter (extra for greasing tin)
225g caster sugar
4 free range eggs
½ lemon (unwaxed) juice & zest
½ orange juice & zest
2 tsp warm water
Pinch of Norfolk saffron
150g plain flour (extra for dusting the tin)
2tsp baking powder
½ tsp bicarbonate of soda

½ tsp cinnamon
100g ground almonds
100g ground pistachios
3 tbsp natural yoghurt

TO DECORATE
150g icing sugar
½ lemon (juice only)
1tbsp orange juice
25g nibbled pistachios
Rose petals


METHOD

  1. Preheat oven to 170°C
  2. Brush Bundt tin with melted butter
  3. Dust tin with flour and shake out excess
  4. Cream butter and sugar for approx 5 mins until light in colour
  5. Gradually add eggs (scraping down edges as you go)
  6. Add lemon and orange zest and juice
  7. Mix Norfolk saffron with 2 tsp of warm wa­ter and add to mix
  8. Add sifted flour, bicarbonate of soda and baking powder
  9. Add ground almonds, pistachios & yoghurt
  10. Mix together well
  11. Spoon the mixture evenly into the Bundt tin
  12. Bake for 30-45 mins or until cake has risen well (insert skewer and it should come out clean)
  13. Leave to cool in the tin for a few minutes
  14. Carefully turn out onto wire rack

TO DECORATE

Beat icing sugar with enough lemon and orange juice to make a smooth but pourable icing Carefully drizzle the icing over the cake and finish with nibbling pistachios and rose petals
