Sara Matthews offers us a healthy salad recipe.
150g of kale, stems removed and chopped
1tbsp of sesame seeds
1tsp of lemon juice
2tsp of fresh ginger, grated
2tbsp of lemon juice
1tbsp of maple syrup
1tbsp of tamari (gluten free soya sauce)
1tsp (heaped) of tahini
Good grind of black pepper
Remove the stems and roughly chop the kale. Place in a large mixing bowl. Add 1 tsp of lemon juice and massage the kale for about a minute or until it becomes slightly darker and softer. Add the grated carrots and sesame seeds.
In a small bowl, mix all the dressing ingredients with a small whisk or fork.
Pour the dressing over the carrots and kale and sesame seeds. Stir to coat.
