Recipes: Gin and Elderflower Jelly

Gemma Simmonite, of Gastrono-me in Bury St Edmunds, celebrates World Gin Day with a gin and elderflower jelly

SERVES 2

INGREDIENTS

4 gelatine leaves
125g of caster sugar
125ml of gin

150ml of elderflower tonic
1 tbsp of fresh lemon juice
Thin lemon slices for decorating

METHOD
Put the gelatine leaves in a bowl and cover with cold water and leave for 10-15 mins

Meanwhile heat the water and sugar in a small saucepan, on a low heat stirring occasionally until the sugar has dissolved

Bring to the boil and let it bubble for 6 minutes until it has turned syrupy, set aside to cool ever so slightly

Squeeze the excess water from the gelatine leaves and add them to your syrup mixture, stir until dissolved

Add the gin, elderflower tonic and lemon juice and strain into a clean jug

Divide between two glasses and chill for a minimum of four hours

When ready to serve, decorate with lemon slices and sprigs of mint
