INGREDIENTS
4.8 litres of red wine
1200ml of water
2 litres of orange juice, pressed
peeled zest from 12 oranges
40g of cloves

45g of star anise
80g of cinnamon sticks
250g of sliced fresh ginger
1300g of brown sugar

Method
Place all these ingredients in a pan and place on a medium heat then bring to a slow simmer, simmer for 10 minutes. Turn off, cover and infuse for 15 minutes then strain
