6 Swift potatoes (you could even use leftover roasted potatoes)
a splash of olive oil
1 medium onion, chopped into large pieces
1tsp each of cumin and turmeric
2tbsp of yellow curry powder
1 can of coconut milk
100ml of water with a cube of chicken stock dissolved
If you are using new potatoes, cook them in a pan of boiling water with a little salt.
Put a splash of oil in another pan and gently cook the onion for about 3 to 4 minutes to soften. Add in the chopped garlic and cook for another minute. Sprinkle all of the spices and stir well so the onion and garlic is covered. Pour in the water with the dissolved chicken stock and stir well.
Add in the coconut milk and mix well. Strain and then pop the boiled potatoes and your leftover turkey into the spicy mix and leave to simmer for about 10 minutes.
Serve with slice of lemon and some rice, or just on its own!
